Lunch Rotation Meal: High-Protein, Veggie-Packed Chicken Salad Prep

That’s why I love this recipe — it’s quick, high-protein, full of fibre, and requires zero cooking. We’re using a ready-made rotisserie chicken and turning it into a fresh, flavour-packed salad that you can eat in multiple ways all week long.

Ingredients
Base:
1 x ready-made rotisserie chicken (deboned and shredded fine)
2 x spring onions (also called green onions — use the white and green parts)
3 x medium-sized carrots
2 x celery stalks (that’s what you call a single unit of celery)
3 x dill pickles
1 x sweet red apple (2 if small)
4 x Medjool dates
Dressing:
1 x tub low-fat cottage cheese (or Greek/plain low-fat yoghurt)
1 x teaspoon Dijon mustard
1 x teaspoon crushed garlic
Salt & pepper to taste
Method
- Debone and finely shred your rotisserie chicken.
- Chop all your veggies super fine — it makes all the difference in texture.
- Combine the chicken, veggies, apple, dates, and pickles in a large bowl.
- In a separate bowl, mix together the dressing ingredients. Pour over your salad and stir to coat.
- Store in a glass airtight container in the fridge.
- Boom — you’ve got a healthy, high-protein, high-fibre lunch prep that takes minutes to throw together.
