Lunch Rotation Meal:Green Goddess Cucumber & Broccoli Salad Jars

If you’re after something fresh, crunchy, and ridiculously good for you, this one’s it. These Green Goddess Salad Jars are packed with greens, fibre, and healthy fats — and they taste just as good as they look.

The best part? You can make them ahead for the week, shake them up when you’re ready to eat, and add your protein of choice to keep things satisfying and balanced. Or serve fresh with your weekend braai!

Let’s make it! 

Ingredients

Base:

Thinly sliced cucumber
Broccoli, chopped finely
Spring onion
1 x ripe avocado (optional — already in sauce)
Walnuts

Green Goddess Dressing:

1 ripe avocado
1 cup plain low-fat yoghurt
1 spring onion (use both white and green parts)
A handful each of mint, basil, parsley, and coriander
1 teaspoon Dijon mustard
2 tablespoons walnuts
1 teaspoon garlic
Juice of two lemons or limes

Method

  1. Thinly slice cucumbers into coins — the thinner, the better, so they soak up all that dressing.
  2. Add finely chopped broccoli — go small so you get a little crunch in every bite.
  3. Add 1 cubed avocado (Add avo on the day of serving if you don’t want it to brown)
  4. Large handful of chopped mint, and chives.
  5. Toss in 2 tablespoons of roasted walnuts or pistachios for crunch.
  6. Blend all the dressing ingredients together in a Nutribullet until smooth and creamy.
  7. If storing in salad jars, add the dressing at the bottom, then build your layers starting with cucumber and ending with the drier ingredients on top. 
  8. When ready to eat, shake it all up or toss gently until coated.

Serving Idea – add Protein (optional but highly recommended):

Add shredded chicken, leftover steak strips, or chickpeas for a more filling, balanced meal.

This is a quick, vibrant lunch prep that’s full of flavour, healthy fats, and fibre — perfect for busy days when you want something that feels fresh without the fuss. This will keep in the fridge for 3 days (keep dressing separate – don’t shake and store!)
